
I had never heard of blondies before but when I heard they were the vanilla equivalent of the brownie I was keen to give them a go.
I found a recipe on the fantastic blog of Hello Cuppies – I adapted the recipe slightly as I couldn’t get hold of Jammie Dodgers in New Zealand but you can find the original recipe here.
You will need:
200g unsalted butter
250g light brown sugar
200g white chocolate
280g plain flour
1 pinch of salt
3 large eggs
1 tsp vanilla extract
5-6 tsps of raspberry jam
Packet of Squiggles biscuits
Preheat the oven to 180C/160C fan and line a brownie tin with baking paper.
Begin by boiling some water in a saucepan and melting the butter and sugar in a bowl placed on top.
Add half of the white chocolate and stir until melted. Once melted leave to cool for 5 minutes.
Sieve the salt and the flour into the chocolate mixture.
This will form quite a thick mixture.
Add the eggs one at a time until completely absorbed into the mixture.
Add the vanilla extract, the remaining chocolate and pour into the brownie tin.
Spoon over some dollops of raspberry jam and using a skewer, swirl it around.
Lay the biscuits on top. I used strawberry flavoured Squiggles.
Bake for 30 minutes then leave to cool for as long as you can manage! Slice into squares and enjoy.
